DOP - What are they
The acronym DOP or “Denominazione di Origine protetta” (Protected Designation of Origin – PDO) is a legal European certification which promotes and protects name of foodstuffs owning quality features which depend on the territory where they are produced.
The production has to take place within a well-defined geographical area and it strictly has to follow specific rules.
The following of these rules has a primary importance and it is controlled and guaranteed by a specific monitoring body.
There are two types of elements which distinguish DOP products from the others :
natural elements : the climate and / or other peculiarity of the territory
human elements : characteristic mode of production, craftsmanship, …
The combination of these two elements allows a product to be produced only in a specific area and with well-defined technical features.
All DOP products are characterized by a yellow-red mark.
